On most of the online forums I've seen users asking What is rooting , Bricking ? etc . These are the few common terms every curious Android and I-Phone user must have heard . These all deals with updating , installing new operating system in the device and playing with the current one to increase its functionalities or to do something interesting.
A bricked device can also be repaired But, need special sort of Hardwares.
Every individual device has different rooting mechanism and require different sort of tools and applications .

Rooting
Rooting basically deals with Android based phones. As Android is based on Linux and by default Android based devices comes with User rights along with certain restrictions put by manufactures. Hence, core tasks which requires root access can't be performed without changing the access privileges.
So, Rooting is basically providing read and write permissions to current user so, that he can access all files [root directory] which can't be accessed directly on the device. Hence , rooting overcomes the restrictions put by device manufacturers on the device to restrict user from performing root tasks. [ Certain tasks if carried out with root access can destroy the entire system ].
Jail Breaking
Jail Breaking deals with Apple based Devices I-Phones, I-pads etc. Its similar to Rooting on Android devices I.e Jail Breaking is bypassing restrictions put by Apple on their devices by using Software and Hardware exploits.
Their is a common limitation on Apple devices that you can't install any application from any external source. All applications must be installed from App Store.
Bricking
Bricking is the unwanted situation in which the device stops responding I.e "The device is nothing more then a Brick or costly Paper Weight itself". The main reason of bricking is system crash while installing updates or new operating system [ROM in Android] due to poorly compiled source code.
The chances of bricking can be minimized by taking all prescribed instructions while Installing ROM or updating the device to abort Installation in between.A bricked device can also be repaired But, need special sort of Hardwares.
Verdict
Rooting and Jail Breaking comes under Hacking activities giving undesired permissions through some kind of loopholes in the software and hardware. The reason all the processes differ from each other is that they are different operating systems and hence different access mechanisms.Every individual device has different rooting mechanism and require different sort of tools and applications .
